Korean Beef and Spicy Noodles

Ingredients

  • 3 lbs flank steak
  • 1 cup soy sauce
  • 1/2 cup gochujang (Korean red chili paste)
  • 1/4 cup honey or brown sugar
  • 3 tbsp sesame oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp rice vinegar
  • 1 tsp red pepper flakes
  • 1 lb ramen noodles or egg noodles
  • 3 stalks green onions, sliced
  • 2 tbsp sesame seeds

Method

    In a bowl, combine soy sauce, gochujang, honey, sesame oil, minced garlic, minced ginger, rice vinegar, and red pepper flakes to create the Korean sauce.

    Place flank steak in the slow cooker.

    Pour the Korean sauce over the flank steak, coating evenly.

    Cover and cook on low for 8 hours (or on high for 4 hours) until the steak is very tender and easily shreddable.

    Remove the steak from the slow cooker and shred using two forks.

    Return shredded beef to the slow cooker and stir to combine with the sauce.

    Cook noodles according to package directions and drain.

    Divide cooked noodles among bowls and top with Korean beef and sauce.

    Garnish with sliced green onions and sesame seeds before serving.
