Black Bean Fudge Brownies

Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Method

    Preheat oven to 350F and grease an 8x8 inch baking pan.

    In a food processor, blend black beans, cocoa powder, sugar, and oil until smooth.

    Add eggs and vanilla extract to the mixture and blend until combined.

    In a small bowl, whisk together flour, baking powder, and salt.

    Fold the dry ingredients into the wet mixture until just combined.
