Homemade Star Crunch Little Debbies

Homemade version of the classic Star Crunch snack cake with crispy waffle coating and creamy filling

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/4 cup hot water
  • 1 large egg
  • 1/2 cup powdered sugar
  • 2 tablespoons butter
  • 2 tablespoons vegetable shortening
  • 1 cup chocolate coating or melts
  • 1/2 cup crispy chow mein noodles

    Preheat oven to 350F.

    Mix flour, sugar, cocoa powder, baking soda, and salt in a bowl.

    In another bowl, whisk together oil, hot water, and egg.

    Combine wet and dry ingredients until just mixed.

    Pipe or spoon batter onto a sheet pan lined with parchment paper to form small cake shapes.

    Bake for 12-15 minutes until a toothpick comes out clean. Cool completely.

    Beat together powdered sugar, butter, and vegetable shortening to make the filling.

    Sandwich filling between two cooled cakes.

    Crush crispy chow mein noodles finely.

    Melt chocolate coating and dip each cake into melted chocolate.

    Immediately roll in crushed noodles to coat. Allow to set on parchment paper.
