Season pork chops with salt and pepper on both sides.
Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
Sear pork chops for 5-7 minutes per side until golden brown. Remove from skillet and set aside.
In the same skillet, add remaining butter and sautΓ© diced onion until softened, about 3 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Add sliced mushrooms and cook for 5-7 minutes until they release their moisture and begin to brown.
Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
Reduce heat to medium and stir in heavy cream and dried thyme. Simmer for 2-3 minutes until sauce thickens slightly.
Return pork chops to skillet, nestling them into the sauce. Simmer for 5 minutes to heat through.
Taste and adjust seasoning as needed. Serve pork chops topped with creamy mushroom sauce.
