Ingredients

  • 2 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 lb boneless, skinless chicken breast, cut into 1/2 to 3/4-inch cubes
  • 1 yellow onion, diced
  • 1/2 lb penne pasta (uncooked)
  • 15 oz fire roasted diced tomatoes
  • 2 cups chicken broth
  • 2 oz cream cheese
  • 3 green onions, sliced

Method

  1. 1

Stir together the Cajun seasoning ingredients (smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne, black pepper, and salt) in a small bowl.

  2. 2

Cut the chicken into 1/2 to 3/4-inch cubes, place in a bowl, pour the Cajun seasoning over top, and stir to coat.

  3. 3

Heat the olive oil and butter in a large deep skillet over medium-high until very hot and the butter is melted and foamy.

  4. 4

Add the seasoned chicken and cook for a couple of minutes on each side, or just until it gets some color. It does not need to be cooked through yet.

  5. 5

Add the diced yellow onion and sauté for about 2 more minutes, until it begins to soften. The onion moisture will help dissolve any browned bits from the bottom of the skillet.

  6. 6

Add the penne, fire roasted diced tomatoes with their juices, and chicken broth to the skillet. Stir until evenly combined, then cover with a lid and bring to a boil.

  7. 7

Once boiling, reduce heat to medium-low and simmer for about 10 minutes, stirring every couple of minutes, until the pasta is tender and the liquid is thick and saucy.

  8. 8

Add the cream cheese in chunks and stir until melted into the sauce.

  9. 9

Top with sliced green onions and serve.
