Place chicken breasts in the slow cooker.
In a bowl, combine Alfredo sauce, heavy cream, chicken broth, minced garlic, Italian seasoning, salt, and black pepper.
Pour the sauce mixture over the chicken breasts.
Cook on low for 4 hours or on high for 2 hours, until chicken is cooked through.
Remove chicken from slow cooker and shred it using two forks.
Return shredded chicken to the slow cooker.
Cook pasta according to package directions in a separate pot. Drain well.
Add cooked pasta, spinach, and sun-dried tomatoes to the slow cooker and stir to combine.
Cook for an additional 30 minutes on low until spinach is wilted and flavors are blended.
Stir in parmesan cheese and adjust seasonings to taste.
Serve hot and enjoy.
